Fish fillet packaging is among the most demanding food packaging applications due to the product's extreme perishability, high moisture content, and delicate structure. ECHO Machinery's fish fillet packaging machines address these challenges through fish-specific engineering. The primary challenge is moisture: fish fillets release significant liquid during storage, and this moisture in the seal area prevents proper film bonding. ECHO's liquid-compensation sealing uses channeled sealing bar profiles that direct moisture away from the seal zone, combined with adaptive seal parameters that extend seal time when moisture is detected. The second challenge is product delicacy: excessive vacuum compresses the fillet structure, damaging texture and appearance. ECHO's programmable vacuum profiles allow setting the appropriate vacuum level for the specific fish species and fillet thickness—deeper vacuum for firm species like tuna and swordfish, gentler vacuum for delicate species like sole and flounder. For retail tray packaging, modified atmosphere packaging (MAP) with a gas mixture appropriate for fish (typically 60% CO₂, 40% N₂, or similar) extends shelf life while maintaining attractive product appearance. The machine construction uses 304 stainless steel throughout, with the rigorous sanitation capability required in seafood processing. Temperature control during packaging is critical—fish must be maintained below 4°C throughout processing—and the machine operates reliably in the cold, wet environment of fish processing facilities.
