Fresh fish is among the most perishable food products, with a refrigerated shelf life measured in days rather than weeks. The moisture challenge with fresh whole fish is greater than with fillets because the body cavity and skin surface carry significant free water. For retail display, the packaging format affects consumer purchase decisions: vacuum skin packaging (film conforms tightly to the fish, showing its natural shape) presents whole fish attractively while providing excellent product protection.
